The fruit of the coffee tree is commonly called a "coffee cherry" and typically takes about eight months to ripen before harvesting. After harvesting, the cherries are processed using either wet or dry methods.
We're currently sourcing this season's green coffee directly from our partner farmers. Right now, fresh cherries are being hand-picked at peak ripeness, carefully processed, and prepared for their journey to our roastery.
After careful harvesting and meticulous washing, our coffee beans enter a critical stage of the process: drying. At this point, the beans still protected by their parchment layer are spread evenly on raised drying beds under natural sunlight.
After smelling the aroma, the coffee cherries are taken for processing. They are carefully depulped and prepared to obtain green coffee beans. These beans are then selected and made ready for export, ensuring good quality and preserving their natural flavor.

Blessed with fertile volcanic soils,ample rainfall,and elevations above 1,800meters,this province consistenly produces world-class Arabica coffees with exceptional clarity and complexity.
